My family will thank you

I am in a rut.

I desperately need new food ideas. Desperately.

I am not picky, but I would love dinner recipes and some without meat.

In exchange for your recipes, I will post 2 of my favorites. One is a yummy stew and the other is a delicious, delectable, delightful dessert. I know you are drooling in anticipation.

CROCKPOT BEEF STEW
1 pound beef stew meat
4 medium potatoes, cut into large pieces
4 carrots, sliced or 4 handfuls of baby carrots
1 bay leaf
1 package dry onion soup mix
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1 (8 ounce) can tomato sauce

Combine ingredients in a crock pot. cook for 6 to 8 hours on low heat or for 4 to 5 hours on high heat, stirring occasionally to mix.


PEPPERMINT CHOCOLATE TRIFLE
1 package of chocolate cake mix, prepared to package directions in a 9x13 pan.
1 large chocolate instant pudding mix, prepared to package directions
1 large cool whip
1 large or several small candy canes, crushed

Break up the cake into large pieces. Place half of the cake pieces in a trifle bowl. Layer with half of the pudding and then half of the cool whip. Repeat. Top off the concoction with crushed candy canes. (You can place candy canes on top of the first layer of cool whip but it is too crunchy for my taste.) This is a hit at parties and everyone thinks you spent forever making it. Oops...there goes my secret.

unfortunately i think we have all of the same recipies. But just incase we love chicken & broccoli, corn chowder, fajitas, tomato soup, homemade pizza, salamon, salmon tacos, Bengal tigers' chicken delight (in a pinch of Salt Lake), artichoke chicken. Let me know if you want any recipes!

I love it!!! I need a dessert that has a Christmas flare for the family party coming up! We love using our crockpot since it is so easy. One I am having this week is two-however many you need chicken breasts, barbeque sauce (any bottled stuff works), and a can of crushed pineapples. After 4-6 hrs on high for 6-8 on low (cook time depends on amt of chicken used) shred the mix and put on top of rice. mmmmmm. Gotta love it. Another favorite: Tomato Basil Pizza (even my 3yr old eats it). Make favorite pizza dough, then roll out. spread some olive oil on top, then put mozarella cheese and some parmesan cheese on. Add fresh roma tomatoes sliced, oregano and some sea salt (or any salt). Bake at 500 degrees for 7 min and then pull out and top w/shredded fresh basil. double yum! Best of luck!

Our fav and easiest is called dream spaghetti. Boil angel hair pasta- drain...set aside. mix 16 oz cottage cheese 8 oz sour cream in a bowl. but ready pasta in bottom of a 9 by 13 pan. next add mixture of sour cream and cottage cheese. then on top add spaghetti sauce (prego works) and then top with shredded mozzorella cheese. heat in oven at 350 for 30 min. it is yummy and easy!

Here are two dishes Garrett and I love:

Southwest Shredded Chicken 3 Bean Chili

4 medium boneless skinless chicken breasts, cooked and shredded
2 Tablespoons extra virgin olive oil
1 large onion, finely chopped
1 large bell pepper, chopped
4 cloves garlic, minced
3 14 oz cans chicken broth
16 oz can black beans, drained
16 oz can red kidney beans, drained
16 oz can canelli beans, drained
15 oz can Muir Glen Fire Roasted Diced Tomatoes
6 oz tomato paste
1 Tablespoon Tabasco hot sauce
1 Tablespoon fresh lime juice
2 heaping Tablespoons chili powder
1 heaping Tablespoon cumin
1 ¼ teaspoon salt
½ teaspoon fresh cracked black pepper

1. Heat olive oil in a large dutch oven over medium heat. Saute onion and bell pepper until softened, about 5 minutes. Stir in garlic and shredded chicken breast; cook for 1 minute then stir in chicken broth, beans, tomatoes, tomato paste, hot sauce, lime juice, chili powder, cumin, salt and pepper. Cook on medium heat for 5 minutes then reduce heat to low and simmer until ready to serve.


BBQ Chicken Salad with Cilantro Ranch Dressing

3 Cups thinly sliced Green Leaf Lettuce
¼ Cup corn
¼ Cup black beans
8 grape tomatoes, halved
1 cooked grilled chicken breast
¼ Cup favorite BBQ Sauce
¼ Cup shredded mozzarella cheese
¼ Cup prepared ranch dressing
1 heaping Tablespoon fresh chopped cilantro leaves
1. Place lettuce into a salad bowl. Layer with corn, black beans and tomatoes. Dice cooked chicken breast and mix with BBQ sauce. Top over salad and sprinkle with mozzarella cheese.
2. Place ranch dressing and cilantro leaves into a small bowl to combine. Drizzle over salad and serve.
**This recipe is for 1 large serving, double accordingly**
